Shrimp and Mango Salad
Ingredients:
1/4 cup plain Greek yogurt
2 tablespoons prepared horseradish
1 tablespoon white vinegar
1/4 teaspoon black pepper
3/4 pound large shrimp, cooked and peeled
1 cup peeled cubed mango
3/4 cup hot cooked rice
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
Combine yogurt, horseradish, vinegar, and black pepper in a large bowl, and stir well. Stir shrimp and remaining ingredients into mayonnaise mixture, and toss gently to coat.
